Chicken Biryani- Hyderabad Chicken Dum Biryani

Chicken Biryani is the best recipe that every one eats ( chicken biryani ) by enjoying the dish. Chicken Biryani is prepared in many Restaurants.

Chicken Biryani is also prepared at Home.

We cook the recipe by taking chicken and marinate it and cook along with rice by adding ingredients.

Here we are going to prepare chicken biryani that is hyderabadi’s chicken dum biryani.

Chicken Biryani is very easy to prepare at home.

So lets make Chicken Biryani. Yummy yummy, tasty, tasty……

Here First we are going to prepare garam masala powder for preparing chicken biryani.

Ingredients for garam masala

  • coriander seeds
  • fennel seeds
  • sajeera – caraway seeds
  • Black Pepper
  • bay leaf
  • star anise
  • cardamom
  • Black cardamom
  • cloves
  • cinnamon sticks
  • nutmeg
  • mace

Grind the above ingredients to make powder. Then the Garam Masala powder for chicken biryani is ready.

Ingredients for marinating Chicken Biryani:-

  • Chicken – Big Pieces
  • Ginger garlic paste
  • Garam masala powder
  • Lemon Juice
  • Cardamom powder
  • Red mirchi powder
  • Turmeric powder
  • Curd
  • Salt
  • Fried Onions
  • Mint Leaves
  • Coriander Leaves
  • Green chillies crushed
  • Ghee

Mix above ingredients and marinate half an hour.

Making of Garam masala powder for Chicken Biryani

Take small mixer jar add coriander seeds, fennel seeds, sajeera,  pepper, bay leaves, star anise, cardamom, black cardamom , cloves, cinnamon sticks, nutmeg, mace

Grind the above ingredients to make in powder

Then garam masala powder ready.

This Garam masala powder can be used in biryani, chicken and mutton recipes etc.

Onions for chicken biryani

Take onions cut in to long pieces.

Put on the stove and pour little oil and fry the onions until  the onions be brownish colour.

Then  fried onions ready for chicken biryani.

Marinating Chicken to prepare Chicken Biryani.

Take 1 kg chicken big pieces and wash thoroughly with water nearly 3 to 4 times.

Then Add ginger-garlic paste, red chilli powder, salt, coriander powder, garam masala powder(which we made already), lemon, cardamom powder, turmeric powder, fried onions, mint leaves, coriander leaves, green chilli , ghee, curd.

Pour little oil in to the chicken.

After adding the above ingredients mix it well and marinate for 1 hour.

Rice for chicken biryani

Take 1 kg basmati rice, add some water and soak.

Keep aside for 1 hour

Cooking chicken

Take a pan put it on the stove and pour some oil in to the pan and heat the pan on high flame

Add marinated chicken into the pan and cook chicken until it is cooked 80%.

And let the chicken fries until the gravy becomes less. (it may take 20 minutes to cook chicken)

Then switch off the stove and keep the chicken aside.

To cook rice

Take a bowl and some water and boil the water then add salt , oil, sajeera,  cinnamon seeds,  ilachi,  cloves and mix it well.

Then taste the water to check salt.

Then add soaked basmati rice in to water and mix it well and let it cook upto 80% and remove excess water from basmati rice.

Chicken Biryani Preparation Method

Take bowl add ghee,  add basmati rice one layer add fried chicken one layer and again add basmati rice one layer, add mint, coriander leaves, add some colour, fried onions, garam masala powder add chicken one layer , basmati rice ghee chicken another layer and add  basmati rice.

Add fried onions and pour little colour, ghee and garam masala

And close the lid and keep on the stove  on high flame for some time, and at low flame for some time until the chicken is cooked.

You may get the smell of the chicken.

Then switch of the stove leave it aside for some time and open the lid and take the chicken Biryani in to the bowl and enjoy the chicken Biryani by eating.
